FreshlineTM Tumbler Freezer Allows for Convenience in Growing Frozen Foods Market
September 01, 2004 Lehigh Valley, Pa.
Air Products today announced the North American launch of its FreshlineTM tumbler freezer, designed to meet the evolving demands of the food processing industry. Using an innovative process configuration, the FreshlineTM tumbler freezer harnesses the speed and economy of liquid nitrogen cooling to create food products enrobed with a variety of sauce or herb mixtures.
With the preference for convenience driving customers' food choices—and ready-to-eat frozen meals currently making up over 27 percent of all main dishes—the frozen meal market has become an evolving $7.6 billion industry. The FreshlineTM tumbler freezer is designed to complement that growth by making frozen food easily portionable into individual servings. This newly found flexibility enables frozen food processors to enter a market that is more appealing to both individuals and smaller families.
"Today, frozen food represents about a third of all food service sales. Having a consistently portioned meal in one package increases both the speed and efficiency of cooking without sacrificing taste," explained Marketing Manager Brian Roy. "The FreshlineTM tumbler freezer helps to achieve this. By preparing a meal with an ideal balance of solids and sauces, and combining that with the convenience of speed and exact portion control, we're addressing the demands of the market. "
Air Products' FreshlineTM tumbler freezer easily handles capacities from 25 to 300 gallons, coating individual food products with sauces and herbs using an IQF process (individually quick frozen). The superior coating technology ensures uniform sauce distribution. This approach allows for total portionability without affecting the flavor of the final product; the mix of solids and sauce is the same, regardless of the amount of product taken from the package.
The FreshlineTM tumbler freezer incorporates state-of-the-art automation that provides efficient operation and process control to minimize batch-to-batch variability. Its modular and automated features make the implementation of this technology straightforward for food processors. And from an operational perspective, the semi-automated cleaning cycle of the unit can be integrated within the overall production schedule to maximize on-stream time.
