Air Products, the leading cryogenic gas, equipment and services supplier, has launched the Freshline® TRS freezer, a continuous cryogenic solution for freezing, chilling and slicing of meat products. The freezer has been designed especially for continuous crust chilling of both cooked and fresh products, prior to slicing or filleting. The Freshline TRS freezer provides manufacturers with a wide range of benefits including improved freezing speed, microbial stability, production flexibility, reduced weight loss and oxidative deterioration.

The freezer has recently been successfully launched in Spain, where it is now in use at five different sites, crust freezing both fresh and cooked meat products. Customers in Spain include the major retailer Carrefour.

Consumer demand for convenient food has led to the dramatic rise in sliced packaged meat and other delicatessen style products. The Freshline TRS freezer responds to this demand by ensuring food manufacturers can increase the efficiency and versatility of crust slicing using cryogenics. In addition to improving baseline production rates, by eliminating the need to move products between chillers and slicing lines, the Freshline TRS freezer reduces temperature discrepancies. This is especially true for freezing of sliced meat products, as fast chilling allows the food product to reach a safe holding temperature quickly, stalling the growth of spoilage organisms.

During its development, formations, shapes, food types, handling concerns and product safety were all considered to help achieve the highest product quality while the product temperature is rapidly and significantly reduced. We have been very pleased with the positive response from our customers in Spain and are now looking forward to launching the products across the rest of Europe.”

The Freshline TRS freezer preserves the shape of the product by hardening it before slicing, thus maintaining the product’s integrity. It also provides manufacturers with improved quality and texture.

Additional benefits of cryogenic freezing with the Freshline TRS freezer include a marked increase in product yield due to less dehydration. Callens comments: “Fast heat transfer allows products to retain moisture normally lost during mechanical freezing. This ensures that microbial growth and related oxidative reactions are reduced due to the short freezing time. This also improves product safety and minimises product degradation.”

The Freshline TRS freezer also offers a footprint of only 8 m² and reaches production capacities of up to 1200kg/h.
